Maple Pepper Planked Salmon

It seems like the only time we really get to enjoy fish is when Alex is away.  Unfortunately, he hasn’t developed a taste for fish (yet) but I am sure he will come around.  Unbeknownst to him, he ate lots of salmon and haddock when he was between one and two years old

We soaked a cedar plank for an hour to prep it for the grill.  For the salmon, we liberally sprinkled a couple of fillets with Maple Pepper, courtesy of Acadian Maple Products. The maple pepper gives a nice hint of maple sweetness to go along with the peppery flavour.  After 10 minutes on the pre-heated plank, the salmon is moist and flakey!

For the sides tonight, we went with Roma tomatoes stuffed with goat cheese, drizzled with extra virgin olive oil as well as a double stuffed potato, filled with garlic, feta and some more extra virgin olive oil.  Both sides were roasted alongside the salmon in the grill.

The results – DELICIOUS!
