Good Friday Fish Cakes

One thing we look forward to on Good Friday is having fish cakes for breakfast.  We don’t do the traditional salt cod fish cakes.  We prefer haddock.  So for our fish cakes we mix together the following:

  • 2lbs haddock fillets, pan-fried
  • 1/2 Vidalia onion, chopped and sautéed
  • 2lbs red potatoes, cooked and mashed with skins
  • 1 egg
  • zest of one lemon
  • 2 green onions, chopped
  • salt and pepper to taste

Combine all the ingredients and then chill until firm.  Form the mixture into 8 patties.  Heat a bit of oil and butter in a cast iron pan.  Pan fry the patties until browned on each side.  Serve with a bit of chow and baked beans if you have them.  Awesome!
