Weekend Brew x2

Wow – where does the time go?  It seems like only yesterday was Super Bowl Sunday!  Work has been just crazy so keeping track of any cooking and brewing has suffered.

A few weeks ago I had a bit of down time so I decided on another all grain test batch to try to improve my procedure as well as put down some Festa Brew to maintain the drinkable stash.

For the all grain, I went back to the ESB recipe I tried just after Christmas, paying more attention to the mash temperatures as well as sparge techniques. I was able to get better gravity numbers this time around so I’m happy.

For the Festa Brew, I decided on something a bit different from my usual – Festa Brew Brown Ale with 700g of honey.  My original plan was to add the honey to a bit of warm wort in the primary, but on the advice of the guy from Noble Grape, I added the honey to the secondary.  Perhaps I should have asked how to get the warm, sticky honey through the neck of the carboy … what a mess!  Within the hour, the yeast was actively fermenting again, so much so that I needed to replace the airlock on the carboy with a  blow-off tube.  I’m hoping for an easy drinking, honey brown ale, ready for mid April.
