Alex and I treated ourselves to some side ribs, 4KG’s worth from Costco. We smoked them low and slow on the WSM with a little maple wood cut from the yard.
Six hours later, we lifted the cover to find some good looking meat. We added a little homemade BBQ sauce and let them sit for a half hour longer in the smoker.
Ribs were awesome. We had two full meals plus enough leftover meat from the breastbones to make two future batches of BBQ baked beans.
